Einkorn is the Original Ancient Wheat the people of the Old Testament times, Like Joseph of Eygpt would grow and harvest for their flour for Bread and cakes, etc.

It is called Triticum MonoCoccom - meaning it has 1 genome made up of 14 chromosomes; Whereas the modern GMO (genetically modified) wheat (Triticum Aesvestium) has 3 genomes and 42 chromosomes - one of these Genomes is toxic to humans and causes gut problems and is high in gluten and lower in protein than Einkorn. GMO wheat can and does cause gut problems and can tear the villi out of your small intestines, causing irritable bowel syndromes and brain fog and loss of memory.
