I’m a hobbyist knife sharpener. I use diamond and ceramic stones and leather strap to hand sharpen all knives. I’m not a professional and doing it by hand takes some time so I usually can get a batch of knives done in the evening and have them ready the next day. I don’t have the specialty tools required to sharpen serrated knives and have not gotten practiced up on scissors yet but pretty much anything else I can handle.
